Grapes are crushed and destemmed and cooled with dry ice, then subjected to a short pre-fermentative maceration of 6-8 hours at 8°C. After pressing, the must is left to decant for at least 48 hours, then it is cleaned from the lees and started to ferment, which usually takes place at a controlled temperature of 15° C (59° F) and it is usually slow and exceptionally long.
